Very shiny brown, almost purple in color and full of warm light. Dense, with a fluid and syrup-like consistency. Notes of caramel, oak and toast on the nose with a complex and unmistakeable acid undertone. Traditionally sweet accented by a rich dark caramel flavor with potent bursts of dry fruit, figs and cherry in the palate.
Drizzle at the end of cooking preparation or when removing food from the flame in order to flavor the dish, but not long enough for it to lose its extraordinary aroma and complexity of flavors. Serve over bolliti(boiled meats) or as a finishing touch to meats or fish dishes. Serve overpanna cotta, mixed berries or drizzle over shaved ice for a perfectgranita. Aged a minimum of 12 years.
