Classic Italian tradition, authentic Columbus salame is made with our unique Fiore bloom – a soft white coating of aromatic mold, similar to the rind of Brie cheese.
Fiore is one of the secrets of our premium salame. During the dry aging process, the Fiore develops to allow the salame to age naturally and enhance its flavor. For your convenience, we remove the Fiore from some of our products, yet the superior flavor is maintained.
We are proud that all of our salumi are Gluten Free, have no MSG and 0% Trans Fat.
Robust with sweet fennel, hot peppers, paprika and red wine, our sopressata is every bit as authentic as the hand-cut, hand-crafted varieties that were made centuries ago. The distinctive flavor of the coarsely ground meat is brought out by a natural, two month aging process. This rich salame is delicious as a quick snack, in an antipasto or with a hearty cheese (a well-aged pecorino or provolone, for example.)
