Classic Italian tradition, authentic Columbus salame is made with our unique Fiore bloom – a soft white coating of aromatic mold, similar to the rind of Brie cheese.
Fiore is one of the secrets of our premium salame. During the dry aging process, the Fiore develops to allow the salame to age naturally and enhance its flavor. For your convenience, we remove the Fiore from some of our products, yet the superior flavor is maintained.
We are proud that all of our salumi are Gluten Free, have no MSG and 0% Trans Fat.
A blend of cracked pepper and fresh garlic combined with a medium grind of extra-lean pork give our genoa salame its aromatic mellowness. Hand-stuffed and slowly air-dried for two months, it's the perfect addition to sandwiches, in an antipasto or as a topping on pizza. You can even slice it into a hearty country salad. We remove the Fiore so it can be sliced easily.
