Produced in the cellars of a midieval fortified village in the Chianti Hills of tuscany. Castello di Volpaia Aged Red Wine vinegar is extracted from carefully selected wines of the region by the traditional "truciolo" method. The wines are percolated through the chips (trucioli)of oak and chestnut, transforming the natural alcohol of the wine into the active acid of vinegar while enhancing the wines complex bouquet. Aceto di Volpaia reaches its full maturity only after long, slow barrique-aging in small oak dna chestnut barrels. The result is an intensely aromatic vinegar of exceptional roundness, with a rich flavor that enhances foods from salads to meats, to strawberries and mangoes.
